République was crafted from top-sited vineyards in Paso Robles’ rolling hills. The ideal growing season produced especially thick-skinned Cabernet grapes, giving the wine deeper color and fuller body. Aussie native Aaron Mercer is the winemaker behind this lovely Cab – he has a degree in oenology from the prestigious University of Adelaide, and has worked at top estates in his home country, France and Germany. Both the exceptional quality of the vintage and Aaron’s deft hand in the cellar are evident in this fine Cabernet.

”Dark ruby and brimming with aromas of black currant, plum and cigar box. These notes flow through to the palate, with oak aging (in French and American barrels) adding notes of toasty spice. This Cabernet has soft tannins, a round finish and showcases the classic Paso Robles character – with intense sunlight producing perfectly ripe grapes and cool coastal breezes locking in freshness. It's already drinking deliciously, and will gain further complexity with a few years in the cellar. République is fantastic with braised short ribs, strip steaks or vegetarian chili, and is also smooth enough to enjoy on its own.”
