For many Chardonnay lovers, just hearing the word ‘Limoux’ makes their mouths water in anticipation. This southern French appellation is home to seriously fine sparklers (Crémant de Limoux) and some of the world’s finest Chardonnay, many of which can rival the top bottles from Burgundy.
You’ll taste for yourself with La Voûte. Because the last vintage was a double-gold smash hit with critics, the bar was set pretty high for winemaker Mark Hoddy – but he was definitely up for the challenge, as you’ll taste. For the 2016 release, he sourced premium grapes from the Astruc vineyard in Limoux Océanique. Here, vines planted almost 1,000 feet up soak in brilliant sunshine and chilly breezes, a combination that locks in ripeness, aromatic intensity, and greater depth of flavor. Back at Mark’s ‘workshop’ in Bordeaux (Le Chai au Quai), he fermented the juice in new oak barrels – a further eight months resting in barrel rounded out all the pure fruit flavors.
Look forward to luscious peach and lemon flavors, with hints of nutty vanilla and a long, creamy finish. Serve in large glasses in order to release the aroma, then pair with chicken (roasted or drizzled with a creamy, lemony sauce) or grilled turbot.
